Inspector notes: Observed the preparation table contained rust build up. PIC advised to properly clean and sanitize the preparation table by 1/10/26 to prevent potential cross contamination. The dishwashers final rinse chlorine concentration was observed at 10 ppm. PIC will contact Ecolab to have the dishmachine repaired by 2/10/25. PIC will use the three compartment sink to wash, rinse, and sanitize dishes. A follow up will be conducted to inspect the dishmachine on 2/10/25.
