Inspector notes: Observed significant food build-up along posterior blade of deli slicer. Slicer was not used today. Equipment food-contact surfaces and utensils shall be clean to sight and touch. Must clean slicer within 72 hours or before next use, whichever comes first.

Inspector notes: Observed substantial black mold build-up along the interior portions of bulk ice machine. Ice machine must be emptied, cleaned, and sanitized within 72 hours. Must increase cleaning frequency at a rate that precludes mold accumulations. *Discontinue use of ice until cleaned; purchase bagged ice to use in interim.

Inspector notes: Observed soup prepared around 11am not cooled to 70°F within 2 hours of reaching 135°F due to poor cooling methods. Temperature of soup was 96°F at 2:30pm. 1.
