Inspector notes: Observed wet stacking metal pans and plastic buckets/containers on shelf by three-compartment sink. CFSM will properly train employees on air drying at utensils and equipment. They can not stack them wet. Training will be today.

Inspector notes: Observed several flies in the kitchen and landing on shelves, equipment, cutting boards, and prep tables throughout kitchen area. CFSM has removed cutting boards to be cleaned and sanitizing prep tables. He stated that they have installed the lights that are attracting flies. CFSM also stated they have had the back door opened too long when receiving product. He will stop leaving the door open while receiving.
