Inspector notes: Observed cold holding TCS (Temperature Controlled for Safety) foods above 41°F in the Central Prep Unit located in kitchen. See temperature log for said items. COS: PIC discarded all of the TCS food from unit. Will use lettuce, tomatoes, and hot dogs from WIC. EH gave PIC several logs to help with monitoring: cooking & reheating log, time & temp log, refrigeration log, cooling & temp log, and TPHC log. EH discussed the logs with the PIC. They will not use unit until it is maintaining proper temperature.
