Employee discarded the tortaillas.

Inspector notes: Observed several items in the walk in cooler made the night before being held above 41F. The ambient air temperature was 40F. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F or below if cold holding. Items were discarded. PIC coached the employees on proper cooling methods.
