Inspector notes: Observed multiple sanitizer bucket quat solution in food prep area measuring less than 200 ppm. Per PIC, these buckets are changed out every two hours and these were made approximately 30 minutes prior. Corrective Action: Discussed properly preparing and testing sanitizer buckets to ensure quat based solution is measuring 200-400 ppm with PIC. All sanitizer buckets were re-made and PIC will retrain employees on sanitizer bucket preparation and testing.

CA: Discussed with PIC: all foods were placed in prep top cooler less than 4 hours prior. PIC relocated foods to walk in cooler to be cooled back down to 41 degrees F or below.
