TCS food being cold held shall be maintained at a temperature of 41 degrees F or below. COS: Food that was reading out had only been setting out for less than an hour and read at 41 degrees prior to coming out of the walk in cooler, they were rotated out for fresh product and cooled down to below 41 degrees prior to reserving. Ice placed in cold well of the PTC to help hold items till maintenance can assist
