Inspector notes: Observed two ice cream machines cold holding units not operating correctly as they where holding ice cream base (dairy) above the allowed 41F at the time of this inspection. COS: All TCS food items where discarded. EH instructs management to switch to using time as a public health control in all cold holding units, and additionally adding ice underneath containers in prep top cooler (where possible) to help keep TCS food in temp while units are replaced or serviced. CA: Time/temperature control for safety food shall be maintained at 41°F (5°C) or below or 135°F (57°C).
