Observed open box of raw pork sausage stored directly touching open box of pre cooked sausage in walk in cooler. CA: Food shall be protected from cross contamination by separating raw animal foods during storage ready-to-eat foods and separating types of raw animal foods from each other during storage by arranging each type of food in equipment so that cross contamination of one type with another is prevented. COS: PIC moved open box of raw bacon and opened box of raw pork sausage to bottom shelf where it won't cross contaminate ready to eat foods.
