Observed multiple containers of liquid egg cold holding above 41 degrees Fahrenheit. CA: Discussed proper cold holding temperatures with PIC. All containers had been stored in cooler for greater than 4 hours and were discarded. PIC adjusted temperature on cooler. This will be rechecked by the Health Department prior to the cooler being used to store TCS foods.

Inspector notes: Observed multiple potentially hazardous TCS foods cold-holding at a temperature greater than 41 degrees. An ambient thermometer was placed in the unit and read 44 deg F. Corrective Action: Discussed proper cold holding procedures with PIC. Because the items were in the cooler greater than 4 hours, the items were discarded. PIC did try to turn the temperature down on the unit. PIC will have cooler serviced if unable to hold at 41 deg F or below. Please notify the Health Department to have cooler rechecked.

Because it was unclear when the cartons were opened, all open cartons were discarded due to lack of date marking. PIC will educate all staff on proper date marking procedures.
