Inspector notes: Observed ice bin had a build up of black organic matter that was located on the inside back portion of the ice bin. CA: Cleaning of Equipment and Utensils. (a) Equipment, Food-Contact Surfaces, and Utensils. 1. Equipment food-contact surfaces and utensils shall be clean to sight and touch. Pf. Advised PIC to discard ice and thoroughly clean ice bin in between uses.

Inspector notes: Observed clean dishes that were stacked wet above the three compartment sink. CA: Equipment and Utensils, Air-Drying Required.
