Inspector notes: -Observed Marinara and Alfredo Sauce not hot holding at 135F or above in the steam table of the front service area near the salad buffet prep top cooler. Marinara was around 112F-129F and Alfredo Sauce was 128F-132F. Marinara was noted on the previous inspection. Both Sauces were doubled pan with a small amount of water in the second pan. *COS, Marinara and Alfredo were reheated in the oven greater than 165F.

Inspector notes: -Observed gasket seal areas of pizza prep top cooler and salad bar prep top/reach in cooler in the front service and pizza prep area of the kitchen with white fuzzy mold growth and debris. -Observed shelving in walk in cooler of the facility with accumulations of old food debris. *Observed inside of salad bar reach in cooler and pizza prep top cooler in need of cleaning to food debris. *CTM conduct general cleaning of listed areas and send documentation to Kristen.Tyler@dph.ga.gov within 72hrs.
