Inspector notes: Observed heavy build up of grease and debris on floors (beneath fryers and heat lamp), and build up of dust on the back of screens and ceiling tiles. Observed broken tile holding stagnant water at entrance door to walk in cooler and open area in front 3 compartment sink. Also observed missing open ceiling tiles in ware wash area. CA Floors, walls and ceilings shall be maintained in good repair and shall be kept clean to sight and touch. PIC advised to continue thorough cleaning of all areas of facility and replace missing floor and ceiling tiles.
