Inspector notes: Observed several foods stored in reach in cooler uncovered (fried rice, grits and alfredo, in multiple reach in coolers. All food items should be covered to prevent cross contamination. PIC will cover all food items and educate staff on proper cover techniques.

PIC advised to label bottles.

Inspector notes: Observed pans stored as clean with left over sticker residue. The food-contact surfaces of cooking equipment and pans shall be kept free of encrusted grease deposits and other soil accumulations. PIC recleaned and removed all sticker residue.

Inspector notes: Observed dirt and grease buildup on floors and walls of the main kitchen. Observed grease buildup on the hood. Observed hole on wall in the storage room. The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products. PIC will have the facility cleaned.
