Inspector notes: Observed black buildup in the ice machine. Advised PIC to discard ice and clean ice machine. CA: In equipment such as ice bins shall be cleaned at a frequency specified by the manufacturer; or at a frequency necessary to preclude accumulation of soil or mold.

Inspector notes: Observed small plastic and metal cups without any handles stored in food containers of flour and cornmeal in the dry storage area, a food container of pasta noodles in the reach-in freezer, and a food container of diced grouper at the oyster bar. CA: During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored in the food with their handles above the top of the food and the container; and in food that is not time/temperature control for safety food with their handles above the top of the food within containers or equipment that can be closed, such as bins of sugar, flour, or cinnamon. COS: Chef removed the metal cups from the food containers and moved to the dish area, while discarding the plastic cups.
