Inspector notes: Observed pans of pico de gallo and diced tomatoes actively cooling in tightly covered containers in RIC, and chiles being cooled on stove top not under an active cooling method. CA: Actively cooling foods shall not be tightly covered while actively cooling. Items being cooled must be closely monitored to ensure critical control points are being met and under active cooling methods. COS: PIC removed coverings from pico and diced tomatoes and moved to WIC; chiles were placed on ice to actively cool.
