Inspector notes: Observed the chlorine in spray bottles made on site too strong. CA: Chemical sanitizers, including chemical sanitizing solutions generated on-site, and other chemical antimicrobials applied to food-contact surfaces shall: 1. Meet requirements specified in 40 CFR 180.940 Tolerance exemptions for active and inert ingredients for use in antimicrobial formulations (Food-contact surface sanitizing solutions) P COS: The sanitizer sprays were remade and tested to measure at 100ppm.

Inspector notes: Observed the handles of in use utensils touching the the cooked rice in the prep top cooler, fish batter in dry storage, and in raw chicken in the chicken cooler. CA: During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored in the food with their handles above the top of the food and the container; COS: The utensils were maneuvered to have the handles stored outside of the food items.
