Nonfood-contact surfaces must be: - Free of unnecessary ledges, projections, and crevices - Designed and constructed to allow easy cleaning and facilitate maintenance Corrective Action: Discussed requirements with the Person-in-Charge (PIC). Cardboard was voluntarily removed from shelving at the time of inspection.
