Inspector notes: Observed brown gravy and baked beans under the heat lamp in the main kitchen at temperature below 135 degrees Fahrenheit. CA: Time/temperature control for safety food must be maintained at 135 degrees Fahrenheit or above when hot holding. COS: Both items were out for less than an hour and were elected to reheat in the oven to above 165F. Both items were heated to well above 165F before placing back under heat lamp which was also turned up.
