COS: PIC closed ice bin lids at the wait station and bar area, and food employee placed covers of multiple bins of flour near the cookline.

Also observed raw ground beef thawing in stagnant water at the vegetable prep sink. Advised PIC on proper thawing methods: Under refrigeration that maintains the food temperature at 41°F (5°C) or less; PF or at a water temperature of 70°F (21°C) or below. COS: PIC turned on cool water at the meat prep sink #1 for proper thawing of raw chicken and relocated raw ground beef to the walk-in cooler and sanitized the vegetable prep sink.
