Inspector notes: Observed CL sanitizer bucket in main kitchen with a sanitization concentration of 25 ppm. Advised PIC that wiping cloths shall be held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n). COS: Had PIC add more CL to increase sanitizer bucket concentration to 50 ppm.
