Intermediate - - From initial inspection : Intermediate - Operator is doing a special process, conducting reduced oxygen packaging, cooking time/temperature control for safety food to a time and temperature combination lesser than those in the Food Code or operating a molluscan shellfish tank for human consumption without a HACCP plan approved by the Division of Hotels and Restaurants. Observed several frozen vacuumed seal bags with both cooked foods and raw foods stored in walk in freezer past 48 hours time frame and operator has no approved HACCP and have not submitted any paperwork. Discussed 48 hrs rule with manager and manager stated will review with chef and see how they will move forward. One bag ROP frozen cooked ground beef in sauce dated 3-17-26 (stop sale issued due to exceed 7 day date marking time frame) ROP frozen raw chicken dated 3-23-26 and no time.
