Inspector notes: Temperature of single door freezer in basement at bottom of stairs along side elevated (10F). Some items in front of freezer were not fully frozen may be overpacked. Items in back of freezer solid - remove some items and place in another unit or schedule maintenance to ensure proper temperature to keep items frozen. PIC stated he scheduled mainenance for tomorrow. Some items in line flip top (first one) by cooking line slighly elevated (44F-46F). Repair or replace. Maintenance scheduled for tomorrow per PIC. PIC stated flip top was open during busy time - Keep flip top closed to maintain temperature of food 41F or below. Temp underneath flip top in reach in ok @ 41F.
