Observed that the water heater was NOT supplying the establishment sinks the required hot water temperatures. The establishment MUST remain CLOSED until they restore the hot water. Ensure that the required hot water temperatures are being reached at each kitchen sink (100 F for handwash sinks and 110 F for the three-compartment sink and mop sink). Observed that there was no hot water at the three-compartment sink (reaching a maximum temperature of 82 F). Ensure that the hot water is reaching a MINIMUM of 110 degrees Fahrenheit (F) at the three-compartment sink so that staff can Wash and Rinse the dishes and utensils properly. Observed a sewage backflow at the left and right compartment of the three-compartment sink when the inspector was running the hot water in the middle compartment. A licensed plumber should come out and diagnose the sewage backflow issue. Ensure that kitchen sewage (discarded water mixed with organic debris and animal fats) is being conveyed correctly through the sewage pipes.
