Hand sink between bakery and restaurant kitchen, is not in working order. Ensure that repairs are made to properly dispose of sewage water into proper drains and that sinks are properly utilized.
Twelve 40 pound boxes of raw chicken leg quarters were delivered day prior, then stored overnight at room temperature. All bags varied in temperatures but ranged from 36 degrees F to 69 degrees F. Chicken was delivered frozen, but not stored away properly. All boxes were checked individually and only 120 pounds of chicken were discarded due to being above proper cold hold temperatures. Owner was on site and understood and supported discarding of chicken not in sound condition. Lard that is sold
Bleach concentration at sanitizing station in bakery did not have proper bleach concentration. Ensure that all bleach water that is used for sanitizer, is maintained between 50-100ppm.
Hand sink in meat market was storing a plunger in sink. Ensure that all hand sinks are properly utilized for hand washing only. Do not store any items in hand sink.
Ensure that all foods are stored 6 inches or more off the floor. Observed boxes of food in walk in freezer, being stored on floor.
Observed 12 boxes of raw chicken leg quarters sitting at room temperatures. Employee stated chicken was delivered day prior but no one put shipment away and it was left overnight. Puddle of water from thawing was evident on floor, as well as boxes were all soaked. Chicken that was off temperature and had passed the cold holding temperature, were discarded on site.
