Ensure all foods are stored in food grade materials. Bleach at three compartment sink was high in concentration. Ensure to maintain between 50-100ppm.

Observed containers of ingredients sitting on floor. Ensure that all foods containers, and single service items are stored 6 inches or more off floor.
Personal drinks and wallets should be stored in a designated area away from food and food contact surfaces.
Seal openings along piping from water heater into ceiling.
frozen raw steaks/pork chops were being stored on rack below microwave for thawing. Ensure that all thawing is done in microwave prior to using, under running room temperature water, or overnight in cold hold unit maintaining 41 degrees F and below.
Observed nopalitos, raw shelled eggs, diced produce, etc sitting at room temperature. Ensure that a time log is kept showing that such foods are held no longer than 4 hours. If 4 hours time limit reaches, then food should be discarded at end of 4 hours.
