Observed bleach concentration for cloth towel solution at steam table, to be very high. Ensure that solution is maintained between 50-100ppm when using bleach water solution.
Leaks observed at drain pipe from three compartment sink. Ensure that leaks are repaired and corrected to allow for proper waste waster disposal.
Improper cooling with time and temperature. Ensure to cool in following manner: 1. Once food is removed from cooking and is at 135 degree F, food had a maximum of 2 hours to cool from 135 to 70 degrees F. 2. Once food is at 70 degrees F, food is allowed an additional 4 hours maximum to cool from 70 to 41 degrees F. 3. Once food is at 41 degrees F, food is able to be covered and stored away.
Observed ice machine heavily soiled with black and pink buildup. Ensure to clean panel routinely to avoid buildup. Observed foods containers in cold hold units being stored on dirty standing water. Ensure that such surfaces are dry, cleaned and sanitized. Ensure to provide clean wipes when cleaning thermometer in between use. Employee washed and sanitized thermometer but then dried with apron. At beginning of inspection, inspector observed employee breaking cooked crispy bacon with bare hands. Employee then washed and donned a new pair of gloves. If ready to eat foods are to be handled, ensure that a barrier is used (i.e. tongs, utensils, gloves, etc)
Observed several prepared foods such as carne guisada, pinto beans, refried beans, etc that were made days prior, to not have proper date marking labels. Foods should be labeled with expiration dates of no more than 7 days.

Establishment must eliminate openings and gaps along doors leading to building exterior, and seal gasp, breaks, opening along baseboards.
