Barbacoa and all other foods reheated to be placed in hot holding table, should be reheated to 165 degrees F and maintain 135 degrees F. Barbacoa was currently holding a temperature of 102 degrees F. Food was reheated on site.
Bleach water solution being used to sanitize dishwares, was not at proper concentration (readingat 0ppm). Issue was corrected on site. Ensure to maintained concentration between 50-100ppm.
Can liner bags were currently being used to cover and store menudo and masa. Ensure that only food grade materials are being used for food storage. Cutting boards with deep scarring should be replaced. Racks and surfaces where foods are prepared and stored should be smooth, easily cleanable, and non absorbent.
Improper set up for ware washing. Ensure that dishes are washed in the following order: 1. WASH (water and dish soap) 2. RINSE (clean water) 3. SANITIZE (bleach water maintained between 50-100ppm)
Ensure dining room door is tight fitting and sealed properly to prevent pests from entering.
