Violations — Dec 5, 2025 Inspection
Eating by employees should not be done in kitchen on preparation tables where other foods are prepared. Ensure to provide a designated area for employee breaks.
Personal items (sweaters, toothbrushes and toothpaste, phones, drinks, snacks, etc) should be stored in a designated area away from food and food contact surfaces.
Picadillo made yesterday was at 45.3 degrees F Pollo guisdo made yesterday was 48.7 degrees F Barbacoa made yesterday was at 53.4 degrees F Carnitas made yesterday was at 52.3 degrees F Manager explained they use ice baths, but foods are being covered and stored when at 50 degrees or so. Ensure to properly cool foods within proper time contraints in order to ensure cold holding temperatures of 41 degrees F and below.
Raw shrimp and raw beef prepared on table where avocados were being cut and prepared, as well as next to cooked chorizo that was left to cool. Ensure that all raw foods are stored in an area that is below and away from ready to eat foods.
Employee was asked to wash hands after eating, prior to handling foods used for customers.
Spray can of WD-40 was stored on top of refrigerator. Vitamins, medications were being stored above food items. Ensure that all toxics and medications are stored in designated areas.
Ensure to provide valid certificates for all employees.
Prepared foods were without date marking labels. Ensure that all prepared foods stored longer than 24 hours, have labels showing expiration date of no more than 7 days, with preparation day counting as day 1.
Hand sink is not properly supplied with hand soap. Hand sink is blocked in a tight corner surrounded by ice machine, rolling cart and three compartment sink. Sink also has leak in drain. Employees are not utilizing sink properly. Sink must be relocated to a convenient area where it will allow for proper hand washing.
Setup for ware washing was not being done correctly. Ensure to 1. WASH 2. RINSE 3. SANITIZE
Ensure that all foods are covered when stored in refrigerators or stored out at room temperature. Screen door was left open allowing for pests and contamination of foods left uncovered. Drinks (bottles, etc) should not be stored on floor. Esure to store 6 inches or more off floor.
Frozen carnitas were left on deep freezer in officer to thaw and were at 62 degrees F when checked. Thawing can only be done in microwave, overnight in refrigeration unit, or under running water.
Repair drain pipe leak at hand sink.
