Observed no certified food manager was present during inspection. Ensure at least one certified food manager is onsite and available at all times during business hours as per**228.31(b) Certified food protection manager shall be present at the food establishment during all hours of operation as required in Food Code, §2-101.11 and §2-102.12.

Observed the mechanical ware washing machine at the main kitchen was not dispensing any concentration of sanitizer. A service technician was contacted to check on the issue. After running three cycles, the sanitizer concentration continued to read 0PPM. Ensure the machine dispenses the proper sanitizer concentration required for sanitization as per**4-501.113 Mechanical ware washing equipment, sanitization pressure.
