Observed large bag of flour that had large hole gnawed on by rodent and droppings were inside bag. Observed small hole in another bag of flour as well. Bags that have been gnawed on must be discarded. Observed cans of condensed milk that had dents. Ensure that dented canned foods are not used for customers.

Dish wares were not being washed and sanitized properly. At time of inspection wares were in first compartment that was a solution made of Foca laundry soap and bleach. Observed canned foods and large flour bags being stored on racks next to rodent droppings, as well as having droppings on such food items. Observed rodent droppings on top of grease and lined baking pans ready for use. Ensure that all wares are 1. Washed (soap and water) 2. Rinsed (water) and 3. Sanitized (bleach water concentrat

Ensure all cooked foods (i.e. barbacoa) is labeled with expiration date when stored more than 24 hours. Prepared foods held more than 24 hours, can be held for 7 days total; with preparation date counting as day 1.

Hand washing sink had items stored in sink. Ensure that hand sink is only used for hand washing, and that sink is readily available at all times.

Walls have water leak damage and sheet rock is breaking in some areas. Areas were walls are not in good repair, should be repaired to be smooth, easily cleanable, and non absorbent. This includes in proof room, walls and roof above grill cooking area, as well as walls and roof above proof room. Area by dry storage has peeling paint as well on wall by door leading outside (toward south side of building)

Cold water is not readily available at ware washing sink. Ensure to provide cold water and not only the hot water already available.

Observed presence of rodent droppings in storage area, on shelves where foods and ingredients are stored, on top of grease and prepped baking pans. Observed rodent droppings along floor and behind rolling racks of breads. Last pest control service for February was provided. Owner already set up appointment for an emergency service by pest control for rodent issue. Seal gaps around any vents, ac unit, pipes, etc. High presence of fruit flies was observed today. Ensure to remove presence of gnats

Fresh sweet bread in sliding window casings in front area, as well as pans of other fresh breads for sale on front table, were not covered. Sliding doors to casings were left open. Please ensure that all foods when displayed, and stored, are properly covered.

Floors, walls, old equipment stored, and equipment exterior should be clean to sight and touch. At this time observed heavy grease buildup in proof room, along racks where pans are stored, handles and containers where icing, filling, and sprinkles, etc are stored, have buildup along containers. Ensure a deep cleaning is conducted to remove buildup of frosting, grease, sugar, etc.

Leaks in roof are causing water to puddle on floor near storage area and along wall behind fryer and grills. Ensure that leaks are repaired.
