LARGER WARES THAT DO NOT FIT THROUGH DISHWASHING MACHINE ARE WASHED AT THREE COMPARTMENT SINK. DURING TODAY'S INSPECTION, CONTAINERS AND LIDS, ETC WERE BEING WASHED MANUALLY, BUT DID NOT HAVE PROPER CONCENTRATION OF BLEACH WATER. ENSURE TO SANITIZE WARES AT 50-100PPM.
LEAK AT FAUCET BEHIND THREE COMPARTMENT SINK WAS OBSERVED. PLEASE ENSURE TO HAVE LEAK CORRECTED TO HELP ELIMINATE WATER ON FLOORS. TOWEL COVERING LEAK FAUCET SHOULD BE REMOVED.
OBSERVED CUTTING BOARD THAT WAS DEEPLY SCARRED AND BROKEN, AS WELLS AS FOOD CONTAINER LIDS THAT ARE MELTED/BROKEN/CHIPPED. ENSURE THAT ALL FOOD CONTAINERS ARE IN GOOD REPAIR AND THAT BROKEN ITEMS ARE REPLACED. ALL EQUIPMET AND CONTAINERS SHOULD BE SMOOTH, EASILY CLEANABLE, AND NON ABSORBENT.
OBSERVED CLOTH TOWELS HANGING FROM EMPLOYEES' WAISTS. ENSURE THAT MULTI PURPOSE CLOTHS ARE STORED IN SANITIZING SOLUTION IMMEDIATELY WHEN NOT IN USE. REMOVE FROM EMPLOYEES' WAISTS.
OBSERVED FOOD CONTAINERS ON FLOOR IN WALK IN COOLER, AND BAG OF HUSH PUPPIES THAT WAS ON WALK IN FREEZER FLOOR. ENSURE TO STORE ALL FOOD CONTAINERS AND PACKAGES 6 INCHES OR MORE OFF FLOORS.
OBSERVED RACKS OF RAW FISH BEING THAWED. FISH READ AT 41 DEGREES F, BUT WAS SITTING AT ROOM TEMPERATURE AND DRIPPING ONTO FLOOR IN BACK AREA. FISH WAS RELOCATED INTO WALK IN COOLER. ENSURE THAT THAWING IS DONE IN THE FOLLOWING MANNERS: 1. UNDER RUNNING ROOM TEMPERATURE WATER 2. IN REFRIGERATION OF 41 DEGREES F AND LESS (OVERNIGHT, ETC) 3. IN MICROWAVE IMMEDIATELY PRIOR TO BEING COOKED OBSERVED A RAW TURKEY SITTING AT ROOM TEMPERATURE ON MEAT SLICER.
ICE SCOOP WAS OBSERVED TO BE SITTING ON TOP OF MOVEABLE LID AT FOUNTAIN DRINK DISPENSER. ENSURE THAT ICE SCOOPS ARE STORED WITH SCOOP IN ICE AND HANDLE OUT, OR ON A CLEAN AND DRY COMPARTMENT THAT ALSO HAS DRAINING CAPABILITIES.
OBSERVED FLOORS IN BACK ROOM WHERE FISH IS THAWED, AND FLOORS IN FRONT WARE WASHING AREA TO BE HEAVILY SOILED WITH WATER DUE TO RAW FISH DRIPPINS, WATER THROWN ONTO FLOORS FOR MOPPING, LEAKING FAUCET AT THREE COMPARTMENT SINK, ETC) PLEASE ENSURE TO MAINTAIN FLOORS TO ELIMINATE WATER BUILDUP. UNDER FRYING GRILLS THERE IS MUCH GREASE BUILDUP. MANAGER AND EMPLOYEE STATED THIS AREA IS CLEANED OUT EVERY SUNDAY. PLEASE CONTINUETO MONITOR AND INCREASE CLEANINGS TO ELIMINATE GREASE BUILDUP IN CREVICESAN
MANAGER IS AWARE OF FLOORS NEEDING REPAIR. FLOORS SHOULD BE SMOOTH, EASILY CLEANABLE, AND NON ABSORBENT. AREAS AROUND DRAINS SHOULD BE SMOOTHED OUT TO ENSURE WATER IS NOT ABLE TO POOL AND CAN PROPERLY DRAIN INTO FLOOR DRAINS. ENSURE THAT GAPS IN BETWEEN TILES, OPENINGS IN FLOORS, ETC ARE FILLED IN TO BE SMOOTH, EASILY CLEANABLE, AND NON ABSORBET. ***MANAGER IS PLANNING TO REPAIR FLOORS AFTER THE BUSY LENT SEASON (TWO WEEKS)
