Refried beans made 2 days prior were at 46.8 degrees F. Ensure foods are cooled properly as follows: Once food is off heat source and cools to 135 degrees F, food has 2 hours to cool from 135 to 70 degrees F. Food then has a max of 4 additional hours to cool from 70 to 41 degrees F. Foods can then be stored once they reach 41 degrees F.
Hand washing sink, when used, is allowing splashing into lettuce at cold hold unit. Ensure to place a splash guard between hand sink and cold hold unit to prevent contamination of cutting board surface, and foods being stored in unit. Ensure to cover all foods (beans, shredded cheese, lettuce) in walk in cooler and all other storage and refrigeration units.
Walls along racks of food stored in walk in cooler, are not in good repair. Sheet rock pieces are falling into containers of foods. Ensure that surfaces of walls are repaired. Suggestions would be to install a sheet of durable material (i.e. metal, hard plastic, etc) on wall where racks rest on. Loose sheet rock can not fall into foods that are served. Ensure to remove any cardboard/towels used to have metal racks and shelves rested on.
Refried beans, and shredded cheese was contaminated and discarded due to sheet rock in food. Ensure to properly cover, maintain, and store containers of foods away from wall to prevent sheet rock chippings from falling into foods. Contaminated foods should not be served.
