Inspector notes: 1200-23-01-.03(5)(a)5. Ice bath for salsa did not have any water. Ice allows the water to move fluidly around the container to ensure proper cold holding. Foods prepped within two hours ago observed on back counter out of temperature control and cooling. Discussed proper cooling methods with PIC such as ice baths and ensuring product is not filled to the brim of containers. Sharing educational handout on cooling.
