Inspector notes: Employee stated ware washing procedures at three compartment sink as follows: dirty dishes, wash, and rinse. Large pots are used for cooking and do not fit inside the low temperature dish machine. CA: retrained employees to wash, rinse, and sanitize dishes and utensils at three compartment sink. Basin used to wash (first basin) should be directly beside dirty drain board of low temperature dish machine to prevent contamination. Provided three compartment sink set up document.
