Inspector notes: Cooling Mexican rice on counter with foil tightly covering medium sized metal pan 101 degrees at 1 1/2 hours . COS by educating PIC and having PIC uncover and place in freezer to rapidly cool to make sure it finishes cooling within 30 minutes to 70 degrees. Checked rice at 30 minutes and reached 68 degrees, no need to embargo.
