Inspector notes: 1200-23-01-.04(5)(a) No test strips present. Sink stoppers and metal scrub brushes are sitting in brown stagnate water with no sanitizer. Says the towel bucket that did not record for sanitizer is actually meant to wash the towels in degreaser. Stated does not have a sanitizer bucket or towels for sanitizer because they were stolen. Oven scrapper sitting in black stagnate water. Informed in past regarding stagnate brown water is not permitted, and routine changing of cleaning buckets must occur. No soap or sanitizer was observed in any stagnate water. Cannot clean with brown water.
