Inspector notes: Observed employee drop utensil to ground. Employee grabbed utensil and placed it in sink. Employee then went to handle clean equipment at grill but was stopped by EHS before contamination occurred. Employee directed to wash hands and change gloves. COS.

Inspector notes: Chicken, beef, pasta, shrimp all holding under 135° COS. Mentioned products returned to grill and were reheated to 165°+ during inspection. Wells where products were held also turned up. COS.
Proper cold holding temperatures
Inspector notes: Raw chicken, beef, salmon, and cooked pasta in bottom of prep unit temped 44-51° COS. All products put on ice during inspection to rapidly cool. Unit thermometer on top rail reading 40° Unit may need adjustment or service to assist with cold holding temperatures of 41° or below. Advised PIC to conctinue icing unit products until issue can be addressed. Will return to observe adeuate cold holding temperatures in prep unit.
