Time as a public health control: procedures and records
Inspector notes: TCS items throughout the expo and preps lines that are under time as a public health control policy were not properly labeled per policy. Everything was placed out at 10:30am. All the items were labeled by staff with their time during the inspection. I will return to confirm that the policy is being properly followed.
Handwashing sinks properly supplied and adequate
Inspector notes: The sink near the appetizer station was not stocked with paper towels. COS by the PIC supplying the sink with paper towels.

Inspector notes: There were opened employee beverages in unapproved containers stored alongside open spice containers in the back prep area. There were containers of sugar in the host sever sation stored under the sink drain.

Inspector notes: There were clean stacked containers and cups throughout the establishment with trapped moisture present.

Inspector notes: Several make unit cutting boards were scored throughout the kitchen. The salad make unit lower drawer was not tight fitting.

Inspector notes: There was build up of debris present on the non food contact surfaces near the nozzles of one of the soda machines near the kitchen.
