Inspector notes: At beginning of inspection, noticed carts in the dry storage area holding boxes of TCS foods (chicken wings, tater tots, pasta, etc.) that were left out of temperature control. Asked employee when truck had dropped off items. Employee stated they drop off the food early in the morning before the store opened. Took temperature of TCS items to make sure foods were kept out of the temperature danger zone (41°F-135°F). Foods temped 40°F (were delivered frozen). Only one employee present during inspection. Walk in cooler was packed full. Assisted employee in reorganizing the WIC so that the 3 carts of delivered TCS items would fit inside. WIC was filled with dough racks at beginning of inspection - had to reorganize so delivered carts would fit. Need to have WIC organized the night before a scheduled delivery so that food truck suppliers are able to easily move carts of TCS foods into WIC if no employees are going to be present during shipment times. Also recommend obtaining a Key Drop Agreement from food suppliers who deliver TCS foods outside of operational hours.
