Inspector notes: 1200-23-01-.03(5)(a)3. Improper thawing observed. Inspector observed two bus bins under a prep table each with a bag of frozen chicken actively thawing. Manager explained that they tried to thaw the chicken in the walk-in-cooler, but it did not thaw in time. Inspector explained that they could thaw it in the prep sink under actively moving cool water.

Inspector notes: 1200-23-01-.03(3)(b)1. Numerous foods kept on the floor of the kitchen, walk-in-cooler, and walk-in-freezer. All foods need to be kept at least six inchess off the floor. A bag of raw chicken inside of a bus bin was found thawing under a prep table in the kitchen. Sauce buckets and a container of cooked chicken were found on the floor of the walk-in-cooler. Bags of product were found on the floor of the walk-in-freezer.
