Inspector notes: Chicken stock, dashi stock, and rice which was prepared in advance, was not cooled to 70 degrees Fahrenheit in 2 hours and then to 41 degrees Fahrenheit within 4 hours. Chicken stock and Dashi stock were observed at temperature ranging from 45-50 degrees Fahrenheit and was voluntarily disposed of during time of inspection. Rice was observed at 43 degrees Fahrenheit and was moved onto a sheet pan in the walk-in cooler to finish the cooling process.
