Inspector notes: Mushrooms and potatoes were observed held at 55-61 degrees Fahrenheit on the counter. Time/temperature control for safety (TCS) food must be held at 41 degrees Fahrenheit or below except during preparation, cooking, or cooling. Per PIC, food was placed on the counter 1.5 hours prior to inspection. Food was moved to walk-in cooler to rapidly cool.

Inspector notes: Proper cooling methods were not used for time/temperature control for safety (TCS) foods. Macaroni salad was placed hot in the refrigerator in containers greater than four inches deep and into portion cups with lids. Foods were made an hour prior to inspection and moved to the walk-in freezer to rapidly cool.
