Time/temperature control for safety (TCS) food must be held at 41 degrees Fahrenheit or below except during preparation, cooking, or cooling. Per interview with PIC, Bismark's were put in unit less than 2 hours prior, Bismark's were relocated to another unit at time of inspection. At the time of inspection, the ambient temperature of the unit was 45F. PIC adjusted the unit, after adjustment ambient temperature was observed at 41F.

Inspector notes: At the time of inspection, the 2 Door Reach-In Cooler located in the prep area was not in good repair. The unit was observed to be maintaining an ambient temperature of 48 degrees Fahrenheit with food temps at 43 to 45 degrees Fahrenheit. Per the PIC, temperature was observed prior to opening at 38 degrees Fahrenheit. Foods were moved to colder refrigeration at the time of inspection. Use of the 2 Door Reach-In Cooler in the prep area is to be discontinued until repaired/replaced. (Per the PIC, a replacement refrigeration unit is on order.)

Cream was moved to freezers and uncovered at the time of inspection. - 2 Pans of potatoes were observed cooling in the prep area 2 door cooler with one pan directly on top of the a covered pan of potatoes. Pans of potatoes were separated and moved to colder refrigeration at the time of inspection.

At the time of inspection, potatoes were observed cooling in the refrigeration unit at 75 degrees Fahrenheit. Potatoes were removed and placed into a freezer to continue to properly cool. All other foods moved to colder refrigeration. - The bakery chest cooler was observed to be maintaining an ambient temperature of 46 degrees Fahrenheit. Unit was also observed to have torn gaskets. Unit is to discontinued for use of refrigeration for Time/Temperature Control for Safety Foods until serviced/repaired.
