Inspector notes: Cheeseburgers and chicken sandwiches were observed held at 118-121 degrees Fahrenheit on the hot plate hot hold unit. Time/temperature control for safety (TCS) food must be maintained at 135 degrees Fahrenheit or above except during preparation, cooking, or cooling. Per person in charge, food had been transferred from the hot cabinet to the hot plate unit about a half hour prior. The temperature was turned up on the hot plate and food was reheated.
