Inspector notes: Proper cooling methods were not used for time/temperature control for safety (TCS) foods. Sausages were observed placed hot in the prep station in containers greater than four inches deep. Sausages observed at 74 degrees F. Per interview of staff, sausages were prepared 1 hour prior to this inspection. -Proper cooling methods reviewed. Staff moved the sausages to the freezer during this inspection to allow for rapid cooling. -Establishment shall keep a cooling food temperature log for all foods in the cooling process. -Cooling food temperature log shall be completed and provided to Inspector upon the next inspection date.
