Time/temperature control for safety (TCS) food must be held at 41 degrees Fahrenheit or below except during preparation, cooking, or cooling. Per the PIC, the food items are held in a separate refrigeration unit overnight and loaded just prior to opening. Food items were mved to colder refrigeration at the time of inspection.

Use of the Unit for Time/Temperature Control for Safety Foods is to be discontinued until unit is fixed/adjusted and maintaining proper ambient temperature of 41 degrees Fahrenheit or below with food temperatures maintained at 41 degrees Fahrenheit or below. Per the PIC, Doors have been approved to order for the Open-Air Cooler. PIC to contact inspector when doors installed.
