Items were observed in the ice well with only half of the container of the food in ice. Per PIC, food was placed in the ice wells 2.5 hours prior to inspection and moved to refrigeration to rapidly cool. Time/temperature control for safety (TCS) food must be held at 41 degrees Fahrenheit or below except during preparation, cooking, or cooling.
