Inspector notes: Taco chicken and beef was observed held at 128 degrees Fahrenheit. Time/temperature control for safety (TCS) food must be maintained at 135 degrees Fahrenheit or above except during preparation, cooking, or cooling. Food had been received from Rogers high school less than 1 hour prior to the time of inspection and was reheated in the oven. Food items were observed reheated to 182 degrees Fahrenheit.

Inspector notes: Chopped salad was observed held at 46 degrees Fahrenheit in the cafeteria cold line. Time/temperature control for safety (TCS) food must be held at 41 degrees Fahrenheit or below except during preparation, cooking, or cooling. Per PIC, salad was loaded less than 20 mins prior to inspection. Salad was placed into freezer to rapidly cool prior to service. Salad was observed at 34 degrees Fahrenheit before returning to service from freezer. PIC observed that cold line was not turned on prior to service.
