Inspector notes: Cheese was observed held at 48 degrees Fahrenheit in the prep unit; prep unit ambient temperature was 58 degrees. Cheese in cold drawer was observed held at 48 degrees. Time/temperature control for safety (TCS) food must be held at 41 degrees Fahrenheit or below except during preparation, cooking, or cooling. Foods in prep unit requiring refrigeration were moved to other refrigeration, working containers were placed in ice. PIC stated replacement prep unit is scheduled for delivery on 6/12/25. Service has been contacted for cold drawers; all food has be relocated.
